Paleo Desserts

We’re doing our best on The Whole 30. I mean, as best as we can. However, this month is my birthday month, and according to The Whole 30 rules, I cannot have cake, I cannot have any snacks, nor can I have the pizza that my dad mailed me. (Long story short, he sent me pizza from home and I’m crying that it’s sitting in my freezer.) I’m kind of upset.

So we’re doing our best to  try more Whole 30 and Paleo options (and considering giving ourselves “cheat meals” so I can enjoy my birthday and Andy can have a snack once in awhile). Which also means we might we switching from Whole 30 to Paleo so we can make a cake or cookies that are allowed – Paleo desserts. On the Whole 30 we can’t make anything that resembles a snack, but if we eat Paleo, we can make them with approved ingredients. So I’ll probably be digging through some cookbooks like these:

Cauliflower Rice

Cauliflower Rice

For the time being, we can’t have rice. It’s not Whole 30 approved as it’s a grain. Which is super hard, because when Andy and I are not on the Whole 30 plan, we eat rice like it’s going out of style. So it led us to trying to find a replacement and led Andy to this recipe for cauliflower “rice,” which I was hesitant about, but once we tried it, was so excited. EverProven Crossfit – Day 2 1.7.14

EverProven Crossfit 1.7.15

The spot right underneath my fingers on my upper palm. It hurts like someone took sandpaper to it. What a horrible feeling.

It’s red and I know why. I was having a hard time today with the power clean at crossfit. First off, this is my intro to the power clean. Secondly, I wanted to get it right, so I over thought it so much that I couldn’t do it correctly. I was muscling the 45 pounds up to my chest instead of letting the motion do the work for me.  Next time, next time.

I do have to give my friend Alyssa a shout out. I would have parked my behind on the couch all night if she hasn’t asked if I was going tonight. Because, honestly, I wasn’t going to go. Continue Reading
