Baked Sweet Potato Fries

20130312-083635.jpg

Our oven doesn’t work and I want to eat some baked sweet potato fries.

Yes, you read that correctly. Our oven doesn’t work. Every time we preheat it, the temperature drops 200 degrees the moment you open the oven and then can’t climb back to the optimum temperature for another 30 minutes (if we’re lucky). It’s been driving me crazy. I can’t bake any cookies or cakes.

So when I decided to follow the sweet potato trend, I pulled a Tim Gunn and made it work.

Luckily our broiler works. So I put the broiler on low and let that warm up. I peeled the sweet potatoes and the cut them into half inch pieces. Tossed them in a dash of olive oil, black pepper, sea salt, and garlic powder. I baked them for 12 minute, turned them over, and then baked another 12 minutes until they got a light char on them.

They actually came out crispy, and I’m so glad I made them!

Jalepeno Garlic Chicken Burgers

20130309-170306.jpg

This year has been crazy so far. In a good way, of course.

I’ve set a goal for myself to run 365 miles this year and to make better life choices. And so far, I’ve been succeeding. I’ve ran a third of my goal so far, been eating way healthier than ever before, and have lost 15 pounds since the first of the year. I’ve even been going to the gym at least five days a week or making sure I do something active those days. The weight loss has been accidental, it wasn’t intended, but merely a reflection of how much my body needed to change. Exercise and good food makes all the difference.

That’s where today’s meal comes in. You don’t have to eat bland food or cut out fats to be healthy. You just have to recognize portions, make good choices and don’t be afraid of vegetables. Really, don’t be afraid of vegetables. For the most part, they have little to no calories and if you eat enough of them, you’ll get full and not crave more food.

When I had this burger craving, I opted to get ground chicken instead of ground beef thinking it would be a healthier choice. For one burger, I used a little less than a quarter of pound of ground chicken and mixed in a third of a diced jalapeno, a teaspoon of ground pepper, and 2 teaspoons of garlic powder. Form the patty and grill in a pan until cooked through, about six minutes a side.

I used a toasted Arnold’s Flatbread as my bun and topped the burger with a sprinkle of shredded cheddar cheese and iceberg lettuce. Delicious and totaled about 300 calories. Not bad for a lunchtime meal and chicken burgers.

Crunchy Taco Salad

20130305-204715.jpg

I’m sick of thinking I can’t eat what I want, so I went on a rampage and had a taco salad that I love. And I wanted to have carbs on it, so I did. Sometimes you just have to say, hey, I want to eat a greasy taco.

After we cooked up some ground beef with taco seasoning, onions, and orange peppers, I decided to cut flour tortillas into strips. On the stove I heated some vegetable oil in a pan. When it started to bubble slightly, I dropped in a few strips of tortillas. I cooked them for less than a minute a side, just so they were golden brown.

Then I let them dry on towels and seasoned with a dash of salt. Topped some iceberg lettuce with the taco meat, some avocado, fresh diced tomatoes, and the tortilla strips. Delicious! Now where’s my margarita?

Easy to Make Mickey Pancakes

I’m totally jumping on the Jennifer Lawrence bandwagon. Don’t be surprised, she’s one of the most adorable people in Hollywood and certainly gives a breath of fresh air to the vision that actresses and actors aren’t real people. Uh, hello! They are, and they’re just as quirky and awkward as we are. Proof is right in Oscar winner Jennifer Lawrence. From her fall to get her award to spending almost every interview talking about how hungry she was, she captured many hearts.

Heck, if I was on the red carpet with her, I would have offered her a snack. Who didn’t bring a snack with them to the Oscars?? I probably couldn’t have made her pancakes for the red carpet, but hey, if they need a stand between interviews making Mickey pancakes, I’m the gal to call. Just saying.
These pancakes are super easy to make, it’s all about the pour. I just made a basic chocolate chip pancake mix for these. The hard part is being patient. Using a 1/4 cup measuring cup to drop a circle, then using a spoon to easily pour in the two ears. Go slow so you don’t over pour and the heat. It takes some practice, but it works. Also, wait until you see bubbles popping up in the batter before you flip it. Otherwise it won’t be ready and will fall apart. Good luck and send me pictures of your attempts. I’d love to see them!
