Quick Spicy Pork and Rice

Spicy Pork and Rice

Every day at lunch, I make the same thing. Hard to believe, right? But it’s true. I dice up a cucumber, dice up a few Roma tomatoes, and grill some chicken. Then I toss it all together with a bit of Parmesan dressing and call it a day.

It’s a cheap lunch, but it’s boring after you’ve eaten it five days in a row. So the other day when I would normally go to the meat counter and ask for a single piece of chicken, I decided instead to make a go at the packaged meat to see what was there, and what was cheap.

I lucked out and found a small package of pork – diced up and scheduled to be eaten with someone’s stir fry. Instead, it was coming home with me as well as some white rice and a package of McCormick Grill Mates Montreal Chicken seasoning. I have some green pepper and some cherry tomatoes to go with and and headed headed out to cook.

Now I know what you’re thinking, Roni, that’s chicken seasoning. Well, no, not really. That’s how they’re marketing it. It’s really just garlic, salt, paprika, red pepper, and some other seasonings. None which are only allowed to be on chicken. I wanted spicy pork, and so be it, I was going to get spicy pork.

So I moderately seasoned the pork, cooked it with the green peppers, then tossed it with the diced tomatoes, and cooked white rice. Surprisingly easy, and divine.

Quick Spicy Pork and Rice

Gather
1/2 pound of diced pork (shoulder or butt)
McCormick Grill Mates Montreal Chicken Seasoning
1/4 green pepper, diced
3/4 of a cup of halved cherry tomatoes
1 cup of Minute Rice

In a medium-sized pan, cook pork seasoned with spice blend. Add diced green peppers to pan and cook. It is important that the meat is not all stuck together in one clump, otherwise, it won’t brown. The meat needs room. Cook meat until it is no longer pink and cooked through.

Cook rice. (I like to use the Minute Ready to Serve White Rice in the single serving packages.) Toss rice with tomatoes and cooked green peppers and spicy pork. Enjoy!

Manly Men Meet Kittens

I can’t stop watching this. You all know, by now, that I’m a cat lover, but to see these manly men meet kittens, well, my heart just melts. I think all of these men just got hotter by holding a cat.

So that’s my advice to you men out there. Stop dragging puppies around to get chicks. Get a kitten. Carry it around. Feed it lovingly. The women will flock to you. You will be surprised how many crazy cat ladies are out there, ones that are not wearing over-sized wool sweaters or living with 10 cats. (Although, there is nothing wrong with that.) Just saying, you might catch more chicks with cats and kittens than without.

Halloween – Orange is the New Black

So you’re telling me you haven’t been following Piper Chapman’s historically epic – yet fictional – prison life? (Ok, it was based on a true story. For real.) If you don’t have Netflix, I’ll forgive you. For everyone else, tune in. Now… I mean, now… I’ll wait.

I’m a bit overly excited about the show. I was nervous at first, not knowing what to expect. But I’ve been sucked in, and sucked in everyone I know. It’s a bit brash, and there’s things I can’t handle in real life anymore after a few of the episodes. Heck, I can’t look at a screwdriver the same way anymore and English Muffins are tainted as well. Also, watching That 70s Show, I can never think of Laura Prepon as Donna anymore. She is forever Vause to me – complete with no-longer-geeky-now-sexy black rimmed glasses (tape included). Sigh.

And hello! It streams on Netflix, so I have no commercials to deal with. But then when I’ve watched the newly released season, I’m left in shambles for a year. So here’s my ode to Orange is the New Black, complete with Halloween costume. Now to decide shall I be Red, Vause, or go all out with the red lipstick to be Morello (to include the veil, or not include the veil….).

Loft Stripes and More Stripes

Stripes, stripes, and more stripes. Was goofing around and came up with this little Loft number. Add this to my list of double patterned looks. I’m really, really trying to prove that you can’t be scared of patterns, or mixing stripes with stripes.
