Sweet Potato BLT

I was going for something original. Something no one had had before.

Okay, let’s be honest, it was an accident. I was starving, had only a few things in the house and ran out of bread. But on the bright side, I did make something that I think I would actually go out and buy the ingredients for to make again. Made for an excellent pre-lunch snack (read: second breakfast) and is technically Paleo. What? Paleo and tastes good? Yup, no bread in this BLT.

Sweet Potato BLT

Gather:
1/2 Pound of bacon
Lettuce
1 Medium sized tomato, diced
1 Sweet potato, peeled and diced
Salt and pepper, to taste

In a medium-sized skillet, cook bacon until crispy. Remove cooked pieces from pan and let cool on a paper towel (which will also soak up some excess bacon fat).

Remove most of the bacon fat and place skillet back on the stove. Add sweet potato and cook on medium heat until crispy. This can take 10-15 minutes. Stir occasionally.

Chop bacon and add to a bowl. Add sweet potato, diced tomato, and roughly chopped iceberg lettuce. Add salt and pepper. Toss and enjoy.

Sausage and Spinach Potato Cakes

So I’ll admit it, I’ve clearly fallen off the face of the Earth this summer. I set my blogging aside to work on My Country Story, my new job, and just simply enjoying the summer. It’s been crazy how much has been going on that I haven’t shared with everyone. From photographing weddings, to photo shoots with friends, to expanding Andy and my business, things have been nuts.

I haven’t even really had any time to cook. Plus, the extremely hot weather has not made it easy to stand next to a hot stove. I did, however, make these fantastic sausage and spinach potato cakes, though. I had run out of food in the house, panicked, and put everything I could find together in hopes that it made something edible. Turns out that when you try to make twice baked potatoes and fail, there’s nothing wrong with turning them into cakes. Hey, not everyone can smoothly scoop out potato halves without destroying them. I don’t quite have that finesse, I guess.

Sausage and Spinach Potato Cakes

1/2 pound of Ground Sweet Sausage
2 loose cups of spinach, washed and stems removed
4 large potatoes
1 egg
Salt and Pepper, to taste

Preheat oven to 375.

In a large saucepan, cook ground sausage until browned. Remove from pan, set aside, but leave any cooked fat in the pan.

Add spinach to the pan and cook for 5-7 minutes, or until spinach has wilted.

Wash and poke holes with a fork into potatoes. While still damp, place them into the microwave and cook for 8-12 minutes, or until potatoes are soft and cooked through. Remove from microwave.

Cut potatoes open, and scoop out insides into a large bowl. Throw out skins. Add ground sausage and spinach to bowl, combine ingredients. Let cool for a few minutes. Add egg, salt, and pepper. T
oss one more time until egg is combined into mixture.

Form potato mixture into palm-sized balls, then flatten to about 1 to 1 1/2 inches thick. Place on a cookie sheet and cook for 18-25 minutes, or until cakes are slightly browned and cooked through. Let cool and serve.

Is it Sweater Weather Yet?

I am so over the heat. Ninety degree days are not something I can handle well. I’m not a beach girl, I’m a comfy-sweater-and-wool-socks-on-a-fall-night kind of gal. So I’m doing the unthinkable and wishing for sweater weather. Wishing for cool fall nights, fallen leaves, pumpkin picking, apple cider and bonfires.

Andy and I have even introduced Pumpkin Bread and Apple Harvest fall candles into our My Country Story line. They’re delicious smelling. Like warm carb-filled pumpkin goodness and the other feels like you’re walking through Dover’s Apple Harvest Day while eating an apple. I can’t make this up.

Faith Findings: Daily Totems

This is your journey and this is your progress. And there is no one else in the race because it is yours alone.

Many of you might have noticed the recent postings of my daily totem. A picture of a card with an animal on it and some words of inspiration or motivation. In the last two months, I’ve learned a lot about myself. That I can be strong, I can accept change, and I can find possibility in the unknown.

I started picking a Totem card each morning to see which spirit animal is mine for that day. I’m not picking a card again just because I don’t like it, I’m accepting it and really listening to what each card says. The deck I use are from Compendium and there are 30 cards in the deck, each with its own animal. It’s funny, I don’t take much stock in fortune cookies, but these I actually have found make sense.

No matter what the card says, I’ve found what I’ve picked has applied to what’s going on in my life at that moment. Take today’s snail. Immediately I knew this was on point. I am starting a new journey, expanding My Country Story and have taken a new job that I adore. I don’t need to try to race anyone else to the top of some corporate ladder, I just need to make myself happy, work slowly, and I’ll get where I need to go.
