Caramel Apple Rice Krispy Treats

Who doesn’t like caramel apples?

So I still had apples hanging around the house, but there was no way I was going to just eat an apple. Seriously, I’ve been in a slump of not making anything too exciting, so I took an evening of being lazy around the house and decided to do something about my sweet tooth. So what did I come up with? A craving for Rice Krispy Treats that lead to a great dessert. If you like caramel apples, you’ll like this.

Basically, it’s the same as a Rice Krispy Treat, but you’ll have to also buy some additional ingredients.

Get:
6 cups of Rice Krispy cereal
A 10 oz bag of regular marshmallows
3 Tablespoons of margarine
1 Granny Smith apple
1 Tablespoon of cinnamon

For topping:
15 caramel candy cubes
1 Tablespoon of water

Peel and dice up the apple. Saute in a pan with 1 of the tablespoons of margarine and the cinnamon. Cook down until the apple is softened.

The house started smelling like apple pie at this point.

Add in the bag of marshmallows and the rest of the margarine. Cook down until all the marshmallows are melted.

Almost there….

Start folding in the Rice Krispies, one cup at a time until everything is in. Put into a brownie pan and let it cool.

While that is resting, in a clean pan, add the caramels and cook on low with the water until it melts and is smooth. Then drizzle over the treats, let rest, cut up, and enjoy!

Mozzarella and Tomato Salad

The basics. Something we can all do, and should know how to do. So I’m gonna give you the secret to my favorite treat.

Gather the following and read on.

This kept me alive and not broke when I lived in France. I would take the tram down to the grocery store and buy a container of fresh mozzarella. That’s the kind that’s a plastic tub full of semi-clear liquid and tiny white balls floating in it. Then I’d grab a few tomatoes (sometimes from the market) and bring them back to my host mom’s house. (I’ll tell you about her house sometime. Loved living there, even if it was only for four months.)

Anyway, I’d cut the tomatoes up into small pieces, and cube the mozzarella into similar sized pieces. Put them in a bowl and added ground pepper and sea salt. (I didn’t want to steal all the spices from my host mom’s cabinet, after all.)

Put that on a loaf of French bread (fresh from the bakery that’s below the apartment), and toast it in the oven. You’ve got heaven.

Now that I’ve brought the “recipe” home, I’ve added some more spices. Mostly garlic powder and some cayenne. A dash of parsley and some oregano and it’s perfect. Serve it with my toast bites I make and you’ve made yourself a quick appetizer to take to your next party or a picnic in the park. I’m invited, right?

Toasty Bread

Carb-aholic here. Pasta, rice, bread, tortillas. You name it, it has carbs, it’s headed for my dinner plate.

So why wouldn’t I make bread bites. Little triangles of goodness that can serve as the basis for any dip or veggie salad at your next party. Preheat the oven to 400.

While that’s going down, take a loaf of Italian bread and cut it into 1 to 1 1/2 inch pieces. Then cut those into thirds or quarters. In a small cup or bowl, melt some butter, a few dashes of garlic powder, black pepper, a small dash of cayenne, and a sprinkling of Italian seasonings (or just some parsley, basil, and oregano). Melt that mix so it’s spreadable and make those pieces of bread glisten.

Cook in oven until the pieces are golden (watch them closely, they can burn. I have done it before).

And ta-dah!!

I could eat them just like that.

Home Sweet Home, Kinda

Oh, how I’ve missed Vermont. The sweet smell of cows on a fall evening, the lush rolling landscape, and the abundance of Ben & Jerry’s. Just kidding, I don’t miss the cows so much.

Luckily I went on a road trip with a friend to Manchester, Vermont. Half a commercial landscape of designer outlets, half small town with the coolest bookstore ever!! Go to Northshire Books, just do it.

Started with pasta on pizza. Yes, you read that right. Chicken Alfredo pasta on top of a pizza. Check the picture if you don’t believe me. Or just go to Christo’s.

The best stop was dinner though – Thai Basil. Their martinis are delicious! And their wonton soup was perfect. Get the Drunken Noodles with chicken. We tried to be cool and get a spice level four (it goes up o five) and almost died. I could handle it, don’t get me wrong. But it was still foolish.
