Buffalo Chicken Dip Recipe

I completely panicked the other morning. Turns out we had a potluck on Tuesday at work, and I was very unprepared for it when leaving the house that morning. So I ran straight for the supermarket and figured there had to be something there I could whip up in a matter of minutes. Cheese and crackers was certainly an option, but when I spotted the already cooked chicken breast by the deli counter, I was all in for making some buffalo chicken dip.

Believe me, even though I had to spend 10 minutes prepping it all before throwing it in the oven, it was well worth it, and for being a last minute dish, it was well received. Turns out you can make a hot dip in less than no time flat, you just have to have faith that everything will turn out right. A little bit of Frank’s Red Hot, some cream cheese, a sprinkle of cheddar, and voila! Just make sure your office has an oven before you decide to bring it to the next company potluck… or else you’re out of luck.

Buffalo Chicken Dip

1 8-oz package of cream cheese, room temperature
1/2 cup of Frank’s Red Hot Sauce
2 cups of shredded cheddar cheese
1 large chicken breast, cooked and shredded
1/2 cup of peppercorn ranch dressing
1 bag of tortilla chips
When shopping for a last minute party, you might also want to buy an aluminum baking pan. Less clean up for you!

Preheat oven to 400.

Mix cream cheese, hot sauce, cheddar and ranch dressing. Once combined, fold in shredded chicken. Evenly spread out dip in a baking dish. Cook in oven for 20-25 minutes or until dip has browned on top, dip is bubbling, and cheese has melted.

Remove from oven and let buffalo chicken dip cool for 5-10 minutes. Serve with tortilla chips or celery sticks.

Maxi dresses are the one time I can feel like I dressed up, yet I get to wear a blanket out in public. You heard me right. I’m not only being fashionable, I’m being lazy. They are one of the most comfortable pieces of attire I own, and I seriously cannot get enough of them. Thank goodness they’re in style right now.

And the main event in my closet right now is this LOFT Mitered Stripe Keyhole dress. I might have impulse bought this one, but it’s so soft and honestly I’ve gotten so many compliments already that I’m trying to find another way to weave it into my wardrobe. Possibly layering the top with something else so it looks like a skirt? Hmmmm, time to go shopping again. And if anyone has any “must” maxi dresses that I should check out, let me know! I only have three that I’ve kept since cleaning out my closet and could use some more.

Coupon Cornered | Baby Shower Deal

Why am I buying pacifiers when I don’t have a kid? Because they paid me to buy it! Yup, you heard that right. I made a dollar today by buying a pacifier, all because it was Easter themed. I have enough friends with kids, so it’s not like it’s going to go to waste. Not to mention that it saved me on soap for washing dishes. I ended up saving almost $8 today by using coupons. If I could spend all day doing this I’d have one of those stocked up houses that I paid only $20 for everything.

But seriously, if you have a baby shower to go to or don’t care that your kid’s pacifiers are pastel or have bunnies on them, then you have to do this. It’s like having an extra $1 coupon for anything you want in the store!

These weren’t even marked, so do a double take through the regular pacifier section. I don’t even think the employees knew they were supposed to be marked down. They were just sitting there and if I had more coupons from NUK, I totally would have bought them all! There had to be at least eight packages just sitting there.

It’s been a long week. And despite the pour weather forcing us to stay inside, I decided it was time to crack into the liquor cabinet. Why not? It’s almost summer (and supposedly spring). I figured I might as well practice some of my summer drinks. Must be prepared for the pool opening and cocktail hour.

I’ll be honest, I’m not a really good bartender. I couldn’t tell you what’s in half the drinks they serve at the bar, and when I do get something other than a craft beer, it usually consists of only two ingredients (rum and coke or vodka and soda). So I’m branching out so that this summer, we’re a little less bored with pitchers of Sangria. Although, I do make a mean Mojito if I do say so myself. Pitchers of those usually go over pretty well.

So we tried something new, called an Italian Soda. I used to have Italian sodas in the upstairs coffee house bar at the bookstore as a kid. These had no alcohol though, just simple syrup and seltzer, often a rose or yellow color depending on the flavor I chose. So to make it a little more adult, we added some vodka. And believe me, this one is easy to make. No seventeen ingredient drink and certainly less complicated than the real Italian sodas I used to drink.

(Alcoholic) Italian Soda

Ice
Vanilla Vodka
Ginger Ale

Fill a small tumbler half with ice. Add 1 1/2 oz of vanilla vodka. Fill the rest of the glass with ginger ale. Stir and serve.
