From One to Horse – Bacon Ham Egg Scramble

We went a little overboard with the breakfast scramble.

“How hungry are you, from one to horse?”

Yup, that’s how we were determining how much breakfast to make. If you’re wondering, I responded with “cat.” It seemed logical at the time, but we still ended up with too much food. I’m wondering what we would have made if I had said “horse.” I’m thinking we would have needed more than a quarter pound of bacon.

I also learned this morning about Epic Meal Time – an absurdly high-caloric online show. I’m not going to lie, I was half between disgusted and half wanted to eat the huge mounds of food they were making. It’s slightly ridiculous… okay, it’s absolutely ridiculous. I heard there may be an epic meal night in the future, and I’ll tell you, I’m terrified.

On that note, we made a less than heart-attack-inducing breakfast. Started by prepping the veggies -diced one whole red pepper and a small sweet onion.

Rule one, find a sous chef to prepare all the vegetables.

I also may have gone a little off my regular meal plan when we opted to cook the veggies in bacon grease, but seriously, who is going to say no to bacon? It’s bacon! First cooked up a quarter pound of bacon and drained most of the grease from the pan, but left enough to saute the onions and red pepper. I also added about a teaspoon of ground black pepper. Probably could have added more.

Cook up bacon, because it’s good.

Cooked down the veggies, trying to carmelize them. That took about 8 minutes. Then we added some diced up ham, I think it was three thin slices. Gave that a bit of a a cook through and added back the bacon into the pan. Then came the eggs. Tried to be healthy with only putting egg whites in for half the eggs and keeping the rest whole. Topped it with a handful of shredded “fancy” cheese and we had ourselves a mini epic meal.

So much goodness in one pan.

 

Gather
1 medium red pepper, diced
1 small sweet onion, diced
1/4 pound bacon
3 slices of ham, diced
3 whole eggs
4 egg whites
1/4 cup shredded cheese (we used “fancy” cheddar mix, because, well… we’re fancy)
ground pepper to taste

Cook bacon until crispy. Remove from pan and drain almost all of the bacon fat, leaving enough to saute vegetables. Cook onions and red peppers down until carmelized. Add ham until heated through. Add back in bacon, as well as all the eggs. Add pepper to taste and cook scramble. At the end, fold in cheese. Serve.

Crockpot Mac N Cheese

There is something inadvertently sexy about a crockpot made meal. Perhaps it’s the slow cooking, maybe it’s how it just makes meats fall apart with the poke of a fork, or even maybe… it’s how easy it makes life. Like this recipe, which I made this recipe for the company Christmas party. It was such a big hit that there weren’t any seconds for anyone. And it took little to no effort. Don’t tell them that, they might make me cook all the time.

Next time I better make double the amount, though. I put it down on the table, turned around, and it was almost gone. Crazy delicious, but I think I also want to experiment with some various other ingredients, like bacon, veggies, or even different cheeses. Let’s get crazy!

Crockpot Mac N Cheese

Gather:
2 cups of cooked shell pasta
4 tablespoons of butter
2 1/2 cups of grated Pepper Jack cheese
3 eggs
1 cup of sour cream
1 can of condensed cheddar cheese soup
1/2 teaspoon of salt
1 cup of milk
1/2 teaspoon of black pepper
1/2 teaspoon of garlic powder

In a medium sauce pan, mix butter and cheese. Stir until melted.

In the slow cooker (a.k.a. crockpot), mix the cheese mixture, eggs, soup, sour cream, salt, milk, pepper, and garlic powder. Add the pasta and stir again.

Cook on low for 3 hours, stirring occasionally.

Winter Cookies

Pretty Italian Cookies

Not sure if you’ve figured it out yet, but I’m Italian. So anise cookies are kind of this thing my family likes to make. I’m not a fan of licorice, so the cookies aren’t my first go-to cookie. However, I have no problem making them, especially since I get to decorate them.

Gather the goods, just no need for the remote

 

You will need:
2 cups flour
3/4 cups sugar
1 tsp baking powder
3 eggs
1 1/4 teaspoon butter
2 tablespoons anise oil

Icing:
1 cup confectioner’s sugar
2 teaspoons milk
1/4 teaspoon vanilla extract

Preheat oven to 350. Mix the butter and sugar until smooth. Add eggs and anise oil and continue mixing until combined. In another bowl, mix the flour, baking powder. Add dry mixture to wet in small batches until combined.

With a spoon, drop small one inch cookies onto baking sheet. Bake for about 12-15 minutes. Let cool on cooling rack.

While those are cooling, mix the icing ingredients until smooth. I added some red to make the icing colorful, then dipped them into the icing and put back onto the rack. Decorate with sprinkles or whatever you’d like. Enjoy!

Spicy Jalapeno Grilled Cheese

I needed something spicy that was meat-free. Going on this kick to see how long I can go without eating chicken, beef, pork, or anything that moves. Eggs and milk are allowed. Seriously, I’m not crazy enough to go vegan here. Just trying to trade some higher calorie food for nutrient rich foods. Although I’m not sure what I made was actually healthy….

Spicy Jalapeno Grilled Cheese

Gather:
Rye bread
Cheddar Cheese
Onion
Jalapenos
Olive Oil
Margarine

Heat the pan with some olive oil and throw in sliced onions. Cook on low with some garlic powder. I cannot stress this enough, you’ll  burn or crisp the onions if you don’t. We’re looking to caramelize them. Right at the end, throw in some diced up jalapenos (right from the jar, not fresh). Pull them out of the pan, place on rye bread with cheddar and throw back in the pan. (Don’t forget to butter the sides of the bread that will touch the pan.

Cook till toasted and you’re golden. I swear, it came out delicious.
