Spicy Inside Out Cheese Burger

Spicy inside out cheese burger, you are one of my favorite things. And so easy to make. Sometimes I just get inspired to actually cook something that might be filling. Not possibly good for me, but yummy either way. So I grabbed from the fridge some ground beef and a block of jalapeno cheddar cheese (Cracker Barrel). I also located the last of the fresh salsa that I made earlier in the day (tomatoes, green pepper, and onion) and some bread.

Mixed some garlic powder, fresh ground black pepper, and cayenne pepper in the meat, then made two patties and placed some diced cheddar in the middle.

Pressed those patties together and used my one egg frying pan. You remember the little gem that I used for making my breakfast egg wrap? Yup, that is the perfect size for making burgers.

Fabulous Fresh Salsa

When I was younger, I thought canned Chi Chi’s salsa was the cat’s meow. I thought that was the only way to have salsa – straight from a can. Boy, was I wrong. I’ve learned that the best salsa is really fresh salsa. Just a handful of fresh, basic ingredients, some spices, and you’ve got yourself one of the most nutrient rich snacks.

Plus, it’s Paleo! Not that it needs to be, but fresh salsa is approved by any diet.

Roma tomatoes are perfect for salsa. Don’t let anyone tell you otherwise. It’s because they aren’t too juicy and cut perfectly. Plus, they’re cheaper!! Go cheap produce.

All diced up, tossed in the bowl with a bit of spices, give it a toss and it’s cheaper and better than canned salsa!!

Smash up an avocado , toss into the fresh salsa, and you’ve got a great snack. I’m thinking I have a thing for Mexican food.. hmmmm I gotta start food traveling to other countries… where to next?

Fabulous Fresh Salsa

4 Roma tomatoes, diced
half an onion, diced
half a green pepper, diced
cayenne pepper
ground black pepper
sea salt
garlic powder

Mix all ingredients in a bowl and enjoy.

Bread-Free Garlic Bread

Delicious and cheesy!

Yup, you read that right. Bread-free garlic bread. Not going to lie, got this from a Pinterest pin, and had to try this out. Looks like bread, right? It’s all cheese and cauliflower. It all started with a head of cauliflower:

From this to garlic bread. Ready for the magic to happen.

Needed:
1 head of cauliflower
3/4 c. shredded mozzarella
3/4 c. shredded Parmesan cheese
1 tsp garlic powder
1 tsp oregano

Preheat the oven to 450 F.

So, in average you’ll get about three cups of cauliflower to one head. Cut it up, place in boiling water, and cook cauliflower until it’s soft. Then I took to mashing it with a potato masher until it was all broken up, added the oregano, garlic powder, 1/2 c of the mozzarella, and 1/2 c of the Parmesan cheese.

Spread that over the cookie sheet into what looks like a pizza crust. Bake that for 15 minutes.

Ready for the oven.

Added the rest of the cheese and popped it back into the oven until the cheese was melted. This is the time you start your cheesy bread dance and await amazing goodness.

Ready to eat!

I sliced it up and took to eating it. Best done with a fork, though. Such a great alternative to garlic bread!!!

Delicious Black Bean Burgers

The other day I was hanging out with one of my friends and her response to what she wanted for dinner was, “black beans.” Yeah, not so thrilling. That was until we realized we could make black bean burgers, a feat that neither of us really thought we were capable of doing. It always seemed like one of those incredibly difficult things to do, putting together a bunch of non-meat items to create a healthy version of something. Oddly enough, we learned (via a quick Google search) that making black bean burgers was easy. Making a few little tweaks, this is what we came up with.

Black Bean Burgers

Supplies:
1 can of black beans
Half a green pepper, diced
Half a onion, diced
2 carrots
1/2 c. bread crumbs
1 egg
1 Tbsp chili powder
1 Tbsp cumin
1 Tbsp garlic powder

(The tomato and avocado were used for toppings on the Arnold’s flatbreads we used as bread.)

To start, we drained and rinsed the black beans. I then peeled the carrots, continuing to use the peeler to make long strips of the carrot. I then diced that a bit so they weren’t so long. Diced up the half a green pepper and half the onion. Then add the egg.

Threw all that in the bowl and then had my friend, Jess, mash up the black beans.

Smash, smash, smash… until….

whoops…..

Let’s just say she was pulled off her black bean smashing job. But she was almost done, so we just threw that into the bowl with the bread crumbs and seasonings. Mashed all that up by hand and formed it into patties, then put it into the frying pan with some olive oil.

Cooked on both sides for about five minutes a side, or until crispy.

I think at this point, we were drooling. I know mine almost didn’t make it to the bun. We ended up making six burgers with all of this, and if our calculations are correct (or nearly close), we think they’re under 100 calories each (before bun, avocado and the tomato). Anyone else who wants to do the math, let me know. I’d be thrilled to have a better estimate. And I might have to make these a few more times. Like a burger, but better! Yum!
