Christmas Tree Pizza Bites

I hope everyone had a wonderful Christmas. We had a great time and the food was so good. (Pat on my back for making my first Christmas dinner. I’ll post some of those recipes later.) We were pretty simple on our dishes, but the one thing that I really enjoyed wasn’t actually made by me.

Andy wanted to have something to snack on, brought this recipe home and said, “I want to make this.” Which really means, “I want you to make this… Please.” And of course, knowing it was cheese and bread, I was on board. Come on, pull apart pizza bread. It has to be good.

However, right before I was about to make it with him, I sliced my finger open with my new knives (Christmas present, I wasn’t paying attention.) So Andy was pretty much on his own (his mom helped, though). Between the two of them, they came out really good, and it even still looked like a tree!

Christmas Tree Pizza Bites

Need:
1 can (13.8 oz) Pillsbury® refrigerated pizza crust
4 oz, or half brick, cream cheese
1 cup shredded mozzarella
2 tablespoons butter
1 clove garlic, minced very fine
1/2 tablespoon dried basil
1/2 tablespoon dried rosemary
1 cup warmed marinara or pasta sauce, for dipping

Comfort Foods – Chicken Soup

Chicken Soup Recipe

I’ve been sick lately. And yes, I try to push myself and tell myself I’m not sick, which always makes me sicker. I should have learned after 27 years, but nope. Not me.

The one thing that has made me feel better lately has been Andy’s soup. Yes, he can cook. I don’t like to tell too many people that. You never know, he could be better than me. (Shhhhhh.) But he does make this really great soup that’s actually Whole 30 approved. Which is actually how we stumbled upon it. When we were doing the Whole 30 in November, he made this. And it’s kind of become a comfort food for me.

When I was curled up in a ball on our bed the other night, I begged him to make it for me. And he did. Because… well, because he’s Andy and he knew it would make me feel better. So what did I come home to the other night after working til the wee hours of the night? His chicken soup. Delicious!

There’s no noodles, which is fine by me, but there’s mushrooms, carrots, lots of chicken, and broth. We’ve learned that we make the best pair when eating soup. I prefer bowls filled mostly with broth, he prefers them mostly with all the chicken, veggies, and such. So by the end of it, we don’t end up with a pot of just shredded chicken, or just broth. It’s kind of perfect.

Andy’s Chicken Soup (No Noodles)

Gather

  • 4 cups chicken broth
  • 1/4 tsp turmeric
  • 1 inch fresh ginger cut into large coins
  • 3 cloves fresh minced garlic
  • 1 lb cooked, shredded chicken
  • 4 oz mushrooms, sliced
  • 3-4 green onions (light green and white part), sliced
  • 2 carrots, sliced into thin rounds
  • Salt & pepper, to taste

Sausage and Kale Quiche | Day 10 of The Whole 30

Kale Quiche

When I lived in France, I ate more unusual things that I ever have living in the US. I tried pâté (loved it) and head cheese (don’t ever bring that gelatinous mess near me). And one of the most famed items was a mushroom pie my friend Lauren’s host family made for us. It was literally just layers of mushroom in a pie crust. Not that appetizing.

However, I did learn to love quiche, particularly Quiche Lorraine (ham and cheese) that was served at my college snack shack. It wasn’t even that crazy of a concept, just an egg pie with meats and cheese.

So when my friend Hannah emailed me a recipe for a Whole 30 approved quiche, I said, why not?! The best part, I still had a crust. The recipe called for replacing a bready crust with sweet potatoes.

Sausage and Kale Quiche (Whole 30 approved)

Gather
2 medium sweet potatoes
2 tablespoons of olive oil
8 eggs
12 oz of ground, unseasoned pork
3 loose cups of kale, stems removed and cut into bite-sized pieces
1/4 tsp rosemary
1/4 tsp oregano
1/4 tsp basil
1/4 tsp parsley
1/4 cup onion, diced
Black pepper and salt, to season
