Hot Chocolate Rice Krispy Treats

Every Rice Krispy Treat starts with a little love and innovation. I haven’t made regular Rice Krispy Treats in awhile, and honestly I wasn’t going to start now.

It got a little cold out, so inevitably I immediately thought of making hot chocolate. Then genius struck – Hot Chocolate Rice Krispy Treats. So while I melted the 3 tablespoons of butter and the bag of marshmallows, I dumped in a bag of dry hot cocoa mix. Folded in the six cups of Rice Krispys and then pushed it into a brownie pan.

But it was missing something, so I melted a quarter cup of chocolate chips in the microwave. In ten second intervals, melt the chocolate until you can smooth it out, then more it over the treats.

Hot Chocolate Rice Krispy Treats

3 tablespoons butter
1 package (10 oz., about 40) Jet Puffed Marshmallows, 10 oz
OR
4 cups JET-PUFFED Miniature Marshmallows
6 cups Rice Krispies cereal
1 package of Hot Chocolate Mix

Meatballs – The Basics

Yup, I’m Italian. Yeah, it’s basically required that you know at least one way to make meatballs. That or I hear they disown you or something. (Okay, I might be making that one up. But you might as well know how to fake making a good Italian meal.)

Preheat your oven to 350. That’s right, they’re going in the oven. Surprising, since how I first learned to make meatballs just meant I put them in a frying pan.

Okay, here we go. Grab a pound of ground beef, 1 egg, 1/2 cup bread crumbs like 4C, a quarter of an onion minced, a quarter of a green pepper minced, 1/4 tsp salt, 1/4 tsp black pepper, 1/4 tsp oregano, 1/4 tsp parsley, and 1/4 tsp garlic powder. Mash all of that up in a bowl and make one-inch round meatballs. Place on cooking sheet and bake for 25-30 minutes until cooked through.

Once complete, you can eat them like that (my preference), or douse them in pasta sauce, cooked pasta, and fresh grated Parmesan.

Oh yeah, and don’t forget to invite me for dinner.

Simply Delicious – Bacon & Scallops

Really, what could be better?

Sometimes simple is better.

To back this idea back up, making this snack/lunch/moment-of-bacon-weakness started after having dinner with my friend the other night. However, walking up to the seafood counter, I decided on the cheaper bay scallops that, yes, are smaller, but are just as good. I also surprised the men at the meat counter by asking for only two pieces of bacon. I’m pretty sure no one does that.

Anyway, there is a total of four. Yes, FOUR ingredients to this dish. Bacon, scallops, salt, and pepper. Sometimes smothering food in sauce or seasonings is not the right path.

The basics.

You’ll want to cut up the bacon into small pieces, then throw them into a hot pan until they are crispy. Do not pour out all the bacon grease, you’ll want some of that to cook up those scallops. While the bacon is cooking, wash and dry the scallops, then season with salt and pepper.

Seasoned!

Then toss into the pan with the bacon and cook through. Be careful not to cook too long or they will get chewy. It will only take a few minutes. Serve up on a plate and enjoy.

I’m Spoiled

Yup, spoiled.

I feel like an insufficient cook. Yup, I will admit it, I’ve been one upped by a guy.

The above is the dinner that was placed before me the other night. When I agreed to eat over my friend’s house, I thought he was going to be opening a jar of sauce, pour it on some pasta and call it a day. Little did I know that he’s actually some sort of Bobby Flay crossed with Alton Brown or something like that.

When I asked if I could help prep dinner with him, he began by pulling almost half the food out of the fridge for dinner. I was chopping onions, cutting up mushrooms, and slicing brussel sprouts in half. He was prepping salmon, making an appetizer of bacon wrapped scallops (yup, you read that right), and making us baked potatoes.

So since in the whirlwind of cooking all I really did was help with brussel sprouts, I’ll give you a quick idea of how we (and I use the term “we” loosely) made them.

You’ll need:
12 Brussel sprouts, washed and halved
Quarter of onion, diced
1/2 cup mushrooms, washed and quartered
1 slice of bacon, diced

Begin by boiling a pot of water. Drop in halved brussel sprouts and cook until slightly tender. I’d say about four minutes. I was vaguely paying attention to how this was going, so apologizes if it isn’t perfect. I was more focused on the bottle of wine I had opened.

In a small frying pan, cook up some diced bacon until crispy. Then add diced onion and quartered mushrooms. Cook until the mushrooms are tender, add brussel sprouts and cook until browned. Ta-dah! Yummy side dish.

Now I just have to figure out how to make that salmon. It was delicious!
