Ladies Lunch | Fondue

Sometimes you just have to take a moment and realize, your friends are what can help make you happy. They’re there for you when you need them, they care about you, and honestly, sometimes you just need someone to watch Pitch Perfect with, even though it’s a silly movie.

Sometimes you just need to laugh. Like really laugh. Not be afraid to let out that body-shaking laugh, or snort when you laugh, or laugh so hard you cry.

That’s in part why we did a ladies lunch. A fondue ladies lunch at that, because .. well, we wanted to.

Cheddar Fondue for Two

And the cheese was easy to get…

And who doesn’t like bread, chicken sausage, and veggies dunked in hot cheese?

White Wine Fondue

Gather:
1 cup of white wine
2 cups of Sharp Cheddar Cheese
2 cups of Monterey Jack Cheese
1 tablespoon of flour
1 tsp black pepper
1 tsp of garlic powder
1 tsp cayenne pepper

For dipping:
1 loaf of hearty French or Italian bread
1 link of pre-cooked chicken sausage, sliced and reheated in a pan
1 head of broccoli
(You can probably feed four with this amount of food, heads up.)

Heat wine in fondue pot and cook over medium heat until bubbly. Turn heat to low and gradually stir in cheeses. Add spices. Add flour to thicken the mixture. Do not let fondue boil. Cook another three to five minutes. Serve with sides with slow burning lamp underneath. Enjoy!

Easy to Make Mickey Pancakes

I’m totally jumping on the Jennifer Lawrence bandwagon. Don’t be surprised, she’s one of the most adorable people in Hollywood and certainly gives a breath of fresh air to the vision that actresses and actors aren’t real people. Uh, hello! They are, and they’re just as quirky and awkward as we are. Proof is right in Oscar winner Jennifer Lawrence. From her fall to get her award to spending almost every interview talking about how hungry she was, she captured many hearts.

Heck, if I was on the red carpet with her, I would have offered her a snack. Who didn’t bring a snack with them to the Oscars?? I probably couldn’t have made her pancakes for the red carpet, but hey, if they need a stand between interviews making Mickey pancakes, I’m the gal to call. Just saying.
These pancakes are super easy to make, it’s all about the pour. I just made a basic chocolate chip pancake mix for these. The hard part is being patient. Using a 1/4 cup measuring cup to drop a circle, then using a spoon to easily pour in the two ears. Go slow so you don’t over pour and the heat. It takes some practice, but it works. Also, wait until you see bubbles popping up in the batter before you flip it. Otherwise it won’t be ready and will fall apart. Good luck and send me pictures of your attempts. I’d love to see them!

Strawberry Rice Krispies Treats

Who ever said pink is only for Valentine’s Day? It’s recently been brought to my attention that the color pink is taking over my life. For a not so girly-girl, I laughed it off. Then I looked at my wardrobe, cell phone case, the nail polish I had on (my toes are almost always painted pink), my gym bag, and the fleece I wear when it’s warm out. All pink! Oh geez, guess I better stop saying I don’t like girly things. When I start seeing glitter on all my things, then I’ll really start to worry. Until then, I make Rice Krispies Treats.

Need:
3 tablespoons butter
1 package of marshmallows (10 ounce bag)
1/4 cup of dried strawberries, crushed (leave some big bits though)
Red food coloring
6 cups of Rice Krispies
1/4 cup of white chocolate chips

In a large sauce pan, melt butter over low heat. Add marshmallows until completely melted. Remove from heat and fold in 1/4 cup of dried strawberries and two to four drops of red food coloring to make it pink.

Add in Rice Krispies, stir until completely mixed in evenly. Press mixture into a buttered pan.

In a small bowl, melt white chocolate in microwave. Heat in 20 second intervals until you can stir it smooth. Add a few drops of red food coloring to make it pink. spread it over the Rice Krispies Treats. When cool, cut and serve. Keep in airtight container and best eaten the same day.

Fresh Fajita Tacos

Hi, my name is Roni, and I’m addicted to reality TV.

There, I said it. Phew. You see, I can’t stop watching shows like Toddlers & Tiaras, Hoarders, and Say Yes To The Dress. They suck you in to the point where you have to watch just one more episode.

On a completely random other note, avocados are on sale all the time recently. I’m not complaining, they’re one of my favorite foods. Just surprised. That’s what has caused me to make fresh fajita tacos. I had some steak, so I seasoned it thoroughly with cumin, cayenne, black ground pepper, and garlic powder. I sliced and grilled that until I got a nice char on the meat.

I placed the meat on a bed of avocado, diced Roma tomatoes, and Romaine lettuce. It was delicious!
