Chicken and Biscuits Recipe

Sometimes I impress myself.

I have never made chicken and biscuits before. To be fair, I think I’ve only eaten it twice before. But for some reason, I decided that’s what I was going to make us for dinner the other night. We made that crockpot chicken and so it made sense to make something special with all the meat. I even had the juices from the chicken left over so I could make gravy. Peas in the freezer? There’s our veggies!

So I took a whirl and ended up with a pretty yummy (and super quick) meal.

Chicken and Biscuits

Gather
2 cups of shredded, cooked chicken (warmed)
3 tablespoons and 1/4 cup of chicken drippings (from making the crockpot chicken)
1 cup of water
2 tablespoons of flour
1/2 teaspoon of black pepper
2 cups of frozen peas (take out of freezer and let warm to about room temperature)
1 package of Pillsbury biscuits, baked according to package

In a saucepan, heat the three tablespoons of chicken drippings on medium-high heat. Add flour and stir until flour thickens.

Continue stirring and slowly add water and remaining chicken drippings. Add black pepper. Stir until you have the consistency you like, but should take about 5 to 7 minutes. Add peas and stir until warmed.

On a plate place sliced open biscuit. Top with some shredded chicken and then with the gravy and peas sauce.

Whole Chicken in a Crockpot

Turns out I can make more than Mac & Cheese and Chili in a crockpot. Andy and I were wandering around the supermarket trying to figure out what to make for dinner when we stumbled upon whole chickens for less than $5. So we bought it… and then I realized I had no idea how to cook it. You see, my grandmother had one of those Ronco rotisserie cookers. Remember those? You could skewer a whole chicken, turn the nob and a few hours later, you’d had a roasted, juicy chicken.

After we had lunch, my grandmother would always make me clean the chicken, pulling apart the meat from the bone for chicken salad the next day. Believe me, no chicken was ever wasted. I pride myself on being able to clean a chicken to the bone. Although to be fair, I might have snuck a few bites while cleaning the chicken. It was too tasty.

So I thought about those meals when I decided how we were going to make dinner. And while I don’t have a home rotisserie, I did have a crockpot.

Crockpot Whole Chicken

Gather
1 whole chicken, cleaned and insides removed
1 teaspoon of cayenne pepper
1 teaspoon of sea salt
1 teaspoon of onion powder
1/2 teaspoon thyme
1/2 teaspoon of garlic powder
1/2 onion, sliced into rings
2 slices of bacon

Place two slices of bacon and onion on bottom of crockpot. In a small bowl, mix spices. Rub the spice mixture all over the chicken. You can even put some of the mix in the chicken cavity and under the skin, although not required.

Place chicken in crockpot on top of bacon and onion. There is no need to add water. Cover and cook on low for 6 to 8 hours or until chicken is falling off the bone.

Bacon Egg and Cheese Biscuit Sandwich

Bacon Egg and Cheese Breakfast Sandwich

About a week ago I bought a container of Pillsbury mini biscuits. It was probably because the adorable little can seemed so out of place around its larger brothers and sisters. I took pity on it and thought I would make something out of the biscuits. Turns out I don’t eat a lot of biscuits, so incorporating them into my daily meals was a bit harder than it should have been. I always forget they’re sitting there in the fridge, and by the time I notice, I’m halfway through cooking something.

So when I started to make my breakfast the other morning, I stopped myself before I grabbed anything and preheated the oven. I popped a piece of bacon in a pan, then cooked up an egg and topped it with some American cheese. Slid it between a freshly baked, warm biscuit and felt quite accomplished with myself. McDonald’s has nothing on me. Plus the smaller biscuits made me feel like I was having breakfast, not a banquet like the larger ones would have. Maybe I’ll start getting up early to make myself something filling. Wonder what other kinds of biscuit sandwiches I can come up with.

Bacon, Egg, and Cheese Biscuit Sandwich

(For one serving)
1 slice of bacon
1 slice of American Cheese
1 egg
Pillsbury mini biscuits, baked as directed

Bake biscuits as directed on the packaging. After baked, slice in half.

In a small pan, cook bacon on medium-high heat, flipping once during cooking. Cook until crispy and remove from pan, placing it on a paper towel to absorb excess fat.

Crack egg into pan with bacon grease. Cook until egg white is cooked through and no longer transparent. Flip egg to continue cooking yolk. Add a slice of American cheese. Egg will be browned. When cooked through, remove. and place on biscuit. Top with bacon. Enjoy.

Buffalo Chicken Dip

Buffalo Chicken Dip Recipe

I completely panicked the other morning. Turns out we had a potluck on Tuesday at work, and I was very unprepared for it when leaving the house that morning. So I ran straight for the supermarket and figured there had to be something there I could whip up in a matter of minutes. Cheese and crackers was certainly an option, but when I spotted the already cooked chicken breast by the deli counter, I was all in for making some buffalo chicken dip.

Believe me, even though I had to spend 10 minutes prepping it all before throwing it in the oven, it was well worth it, and for being a last minute dish, it was well received. Turns out you can make a hot dip in less than no time flat, you just have to have faith that everything will turn out right. A little bit of Frank’s Red Hot, some cream cheese, a sprinkle of cheddar, and voila! Just make sure your office has an oven before you decide to bring it to the next company potluck… or else you’re out of luck.

Buffalo Chicken Dip

1 8-oz package of cream cheese, room temperature
1/2 cup of Frank’s Red Hot Sauce
2 cups of shredded cheddar cheese
1 large chicken breast, cooked and shredded
1/2 cup of peppercorn ranch dressing
1 bag of tortilla chips
When shopping for a last minute party, you might also want to buy an aluminum baking pan. Less clean up for you!

Preheat oven to 400.

Mix cream cheese, hot sauce, cheddar and ranch dressing. Once combined, fold in shredded chicken. Evenly spread out dip in a baking dish. Cook in oven for 20-25 minutes or until dip has browned on top, dip is bubbling, and cheese has melted.

Remove from oven and let buffalo chicken dip cool for 5-10 minutes. Serve with tortilla chips or celery sticks.
