Super Easy Buffalo Chicken Pockets

Buffalo Chicken Pocket

When I’m not feeling good, there are a few things that make me feel better. Anything with bread usually does it. That is, as long as I don’t have a scratchy throat.

Been feeling pretty run down lately and as a pick-me-up, decided I wanted to make some “hot pockets” – meat and veggie stuffed adult hot pockets that need two hands, not one. They’re probably not good for my diet at all, but on the bright side, at least I mentally was feeling better. Bring on the sweatpants!

While these are not quite as labor intensive as my last go at a Buffalo Chicken “Hot Pocket,” they’re certainly as delicious.

Buffalo Chicken Pockets

1/2 ball of pizza dough, cut in 2 and rolled thin
2 Buffalo chicken sausage links, diced
1/2 sweet onion, diced
1/2 green pepper, diced
2 slices of American cheese

3 tablespoons of butter
Fresh Parmesan Cheese, grated

Preheat oven to 450.

In a skillet cook chicken sausage, onion, and green peppers until chicken is browned.

On rolled out dough, place a slice of american cheese to each piece of dough. top with chicken sausage mixture. fold corners of dough to create a closed envelope. Place folded side down. Cut two or three small slits in the top of the dough.

Melt butter and pour evenly over dough pockets. Top with grated Parmesan cheese.

Bake for 10-12 minutes, or until pockets are golden brown. Let cool, serve and enjoy.

Bold, Bright, And Beautiful

Sometimes, I need to step outside my comfort zone and give in to the fact that not everyone has the same aesthetic as I do. Case in point: an outfit put together by one of my coworkers.

Now you have to understand that I love patterns, but not bold patterns. And I certainly don’t put together bold patterns with bold colors, because – frankly – they scare the heck out of me and I don’t even think my loud obnoxious personality could compete in any way shape or form.

So when I walked around the corner and saw this graphic print dress with a bright yellow tank, and a bright necklace, I didn’t know exactly what to think. First off, it didn’t scream Loft to me. But then I thought about it, Loft isn’t about just fitting one mold. It’s about making something your own. Sure, it’s bright, it’s bold, it’s even a little out there, but it’s taking a chance.

So I’m going to take the hint and maybe try it myself, look for outfits that are a bit outside my comfort zone and bright and bold for summer. Who’s with me?

Closet Clean Out | LBD and Tops

As some of you know, I’ve been helping a friend clean out her closet to make a few bucks for her summer trips. If I had half the wardrobe as her, I’d be happy. The stuff I’m pulling out of the suitcases she gives me are in pristine condition, too bad I’m not a size 00. There are a few items my size, but sadly I don’t need them (like the fabulous Little Black Dress (LBD) I found.) God help me if I get invited to a cocktail party and finally realize I need it.

I’m so jealous some times to see how much clothes some people have. Like, I’d be totally content with having a closet like this (Click) to fill up. No big deal. Instead I’ve go a small dresser and a clothes rack full of button-ups and sweaters. And I’m not ungrateful, I do have quite a bit, just would like to live like Kim Kardashian for a day.

So for now, I’m living vicariously through my friends. Polka Dot Linen Dress | Loft Dress

Loft Polka Dot Linen Dress

I got a little silly the other night at work and tried on a few new items. We just received a HUGE shipment of new dresses, pants, tops, and the cutest little purses. And then I spotted this, a polka dot linen sleeveless dress that just called to me. There is something vintage feeling about this linen dress, and I think that’s why I love it so much.

As a joke (mostly on myself), I tried it on with a bright pink cardigan (desert blush, I believe it’s called). Turns out, it was pretty darn adorable. And I’m pretty sure just about every girl on my shift was going to get their own.

Now I just need an event to go to… or an afternoon picnic. I can’t help myself, just too cute!
