Chicken Parmesan Pizza

You ever can’t decide between two different meals, then take the plunge and say, “I’ll just have both”? Well, that’s kind of what happened here. You see, I really wanted to have Chicken Parm, and Andy really (and I mean REALLY) wanted to have pizza. So much so that he was about to speed dial Domino’s, and I was already pulling out the bread crumbs for my half of the meal.

So we put our heads together and brainstormed. . . and then we compromised. Why not have Chicken Parmesan Pizza? Well, besides the excess of calories, and the amazing amount of carbs ready to be ingested with such a meal, we dove head first into making what we hoped (and what became) a very delicious meal.

Turns out that it’s not that much harder than making chicken Parmesan, the only difference is instead of serving it with pasta or a side dish of veggies, it’s coming with bread.

Chicken Parmesan Pizza

1 ball of pre-made, uncooked pizza dough
1 large chicken breast
Canned garlic and herb pasta sauce
1 cup of shredded mozzarella cheese
Fresh grated Parmesan cheese
Panko bread crumbs
1 egg
Dry Italian herbs
Olive oil
Fresh basil, diced (optional)

Preheat oven to 375.

Cut chicken into three flat pieces, but cutting it into thin stripes. In a bowl, whisk eggs. In a second bowl, place 2 cups of Panko bread crumbs and 2 tablespoons of dry Italian herbs, mix. Dredge chicken in eggs wash, then place in Panko mix and coat chicken. In a medium skillet, heat 2 tablespoons of olive oil on medium heat. Place chicken in pan and cook through until breadcrumbs are browned and chicken is cooked through, about 6-8 minutes total (4 minutes a side).

Remove chicken from pan and after letting it cool for a few minutes, cut chicken into strips, or about 30 pieces total.

While chicken is cooking, roll out pizza dough to about 1/2 inch thick. Place on a cookie sheet and bake for 8 to 10 minutes, or until dough is hard to the touch but still spongy.

Spoon pasta sauce onto pizza dough, enough to evenly coat the dough. Top with diced chicken, the top that with mozzarella cheese. Add about a 1/4 cup of fresh grated Parmesan cheese and place in oven. Bake for about 15-20 minutes, or until cheese is melted and slightly browned.

Remove from oven, top with basil. Serve and enjoy.

Ranch Green Beans

So I just got back from a wonderful weekend in Florida surprising my mom for her birthday (don’t worry, I’ll have a post on that soon). But in the mean time, I realized I haven’t had much time to share with you any of my recipes. So I shall get to blogging and start you back into the world of food with a really simple, really quick ranch green beans recipe.

I promise, it’s good. I’m not a green beans kind of gal and one of my girlfriends actually got me hooked on green beans because of this recipe.

Ranch Green Beans

Gather
1/2 pound of fresh green beans, cleaned and ends cut off
Package of dry Hidden Valley Original Ranch Dip Mix
Water

In a medium saucepan, place green beans and a quarter cup of water. Heat skillet to medium heat, until water is simmering. Cover and cook until green beans are tender, about 8 minutes. Remove all but about a tablespoon of water, add 1/2 tablespoon of dry ranch dip mix into saucepan, stir, and cook for another two minutes. Green beans should be coated and water should be evaporated.

Serve and enjoy.

Sweet and Spicy Buffalo Wings

Spicy Buffalo Wings

This all started with a conversation about the difference between wings and boneless wings. I fought hard. I fought really hard to explain that “boneless wings” are actually just chicken nuggets.

And I think I only “won” (if not momentarily) because I was cooking dinner, and we wouldn’t have eaten if we deliberated any longer. So I grabbed the traditional, bone-in wings, and got at it. For an evening of sweet and spicy buffalo wings, follow my lead.

Sweet and Spicy Buffalo Wings

Gather
3/4 cup of flour
1 tsp of cayenne pepper
1/2 tsp of garlic powder
1/2 tsp of salt
1/2 cup of butter, melted
1/2 cup of Frank’s Red Hot Sauce
1/4 cup of brown sugar
20-25 wings

Preheat oven to 400. In a large bowl or large ziplock bag, combine flour, cayenne pepper, garlic powder, and salt. Toss wings in flour mixture until wings are evenly coated, shake off excess flour.

In another bowl, combine melted butter (warm), brown sugar, and hot sauce. Mix until combined. Dip wings into butter mixture to coat them, then place evenly onto cookie sheets. Place in oven and bake for 45-50 minute, or until chicken is no longer pink inside and crispy outside. Turn wings over halfway to ensure chicken is baked through.

Tank DressI’m obsessed with this tank dress. Not like little obsessed. Like, I want to wear this dress all day long. I want to walk around Boston next summer in this dress and go get lunch at one of those really nice little restaurants in the North End.
