Paleo Oven Baked Apple Crisps

Apple Crisps

Our household loves apples. We go apple picking in the fall, we make apple turnovers (and of course, apple pie), and we always have apples on our counter. So it’s probably not a surprise that I’ve found yet another way for us to get our apple fix, apple crisps. This time, just simply dehydrating them in the oven.

I’ll be honest, the first time they needed to be in longer, and were moist and flexible. So the key is to be patient and just let them cook on really low heat for a long time. If you have a dehydrator, well, you’ve got it made in the shade then.

 Oven Baked Apple Crisps

Gather
2 Granny Smith apples
Cinnamon, optional

Preheat oven to 200 degrees. Remove stems from apples, then using a mandoline slicer on a medium level slice, cut apples. After cut, remove any seed bits that might be stuck in the center of the apples. Most will fall out on its own. Place slices evenly on a cookie sheet and place in oven. Bake for 1 hour. Remove from oven, flip all apple slices, then bake for another hour.

Pieces should come out dry. Sprinkle with cinnamon if you like.

Easy Pumpkin Spice Hot Cocoa

Pumpkin Spiced Hot Cocoa. Yum. It’s what most New Englander’s consider the start to fall. We’re obsessed.

Falling leaves, cooler weather (sweater weather, to be exact), makes me want everything pumpkin. Bring on the cookies, pies, breads, whoopie pies, and lattes. Which is why when I was craving a hot cocoa and pumpkin at the same time, I decided this was the best way to get my fix.

I’d love to say I spent hours on this one, but honestly, I was just in the mood for something with a pumpkin spice taste, without having to leave the house. I also recently learned that there is a spice blend called pumpkin spice. Could it make fall any easier? So what did I do? I decided to take it for a spin.

The pumpkin spice seasoning is basically a mixture of nutmeg, cinnamon, ginger, and allspice. All you need to do is add a 1/4 of a teaspoon of pumpkin spice seasoning to hot cocoa and you’ve got yourself some pumpkin spice hot cocoa. Too easy!

Easy to Make Pumpkin Spice Hot Cocoa

Gather
1/4 tsp pumpkin spice seasoning
Water
Swiss Miss or other powdered hot cocoa mix

Combine hot cocoa powder with pumpkin spice seasoning. Add hot water, stir and enjoy. Add water to hot cocoa mix directions.

Two Ingredient Pumpkin Donuts

Hello, September, hello fall.

Tis the season for all things pumpkin, including pumpkin donuts (or doughnuts.. however you want to spell it). I’m thoroughly impressed with this super easy pumpkin doughnut recipe. Two ingredients and a donut baking pan.

Found this recipe and decided to give them a whirl. It seemed simple enough, just mix, pour, bake. My donut pan was getting sad sitting on my baking shelf. I haven’t used it in months. And with fall right around the corner, well, it just made sense. Sadly, it’s been super hot out, so this is my only real sign of fall. I’m contemplating more pumpkin dishes soon. Maybe I’ll find some way to make pumpkin Rice Krispy Treats, what do you think?

Two Ingredient Pumpkin Donuts

1 box of yellow cake mix
1 10-ounce can of pumpkin puree
1 tsp of cinnamon (optional)
1/2 tsp of nutmeg (optional)

Preheat oven to 350. Mix all ingredients, then add batter to donut pan (fill sections halfway), and bake for 10 minutes, or until you can poke with a toothpick and it comes out clean.

Real Watermelon Jello Shots

"Real" Watermelon Shots

BBQ time means watermelon. But when the majority of those attending are adults, well, it just makes sense to make Jello shots. However, those little cups get messy and then there is all the trash that comes with it, so we found another way to make Jello shots without all the plastic trash and to make it look cute. Plus, it wasn’t that much work! Just a lot of gelatin.

Katie will probably kill be for the above picture, but to be fair, she knew a picture was about to be taken. Just proof that we did, in fact, eat them, and I will say they were delicious!!

The below picture is just to give you a sense of how we filled the melons (you’ll need that for later when you look at the recipe.) So clear out the fridge and make some! We’ve been talking about doing this to all kinds of fruit for a Jello shot “fruit platter” with lemons, limes, oranges, and strawberries. How fun would that be?!

"Real" Watermelon Shots

“Real” Watermelon Jello Shots

Gather
1 large watermelon
4 3-ounce boxes of watermelon Jello
2 1-ounce boxes of unflavored gelatin
4 cups of vodka (plain or watermelon flavored)
4 cups of water

With a large knife, carefully split the watermelon in half, lengthwise. It will now be in two halves. Scoop out the fruit, leaving the rind and less than a 1/4 inch of fruit. Set fruit aside for snacking later. Place watermelon rind in a glass baking dish with sides. It will act as a bowl for the Jello shots. Keep it in place with paper towels, so it won’t tip.

Bring 4 cups of water to a boil. Add gelatin and watermelon Jello to a large bowl. Add boiling water and whisk until gelatin is dissolved. Add 4 cups of vodka and stir until combined.

Pour mixture into one half of the watermelon until it is filled to the top. If using a large watermelon, you may only need one half. If a small watermelon, you might use both halves.

Place is refrigerator and chill for at least 4 hours or until gelatin is hardened. Once hardened, remove from fridge and slice into 1-inch pieces. You can cut them once again so they look like wedges. Refrigerate until the party.
