Sweet Potato BLT

I was going for something original. Something no one had had before.

Okay, let’s be honest, it was an accident. I was starving, had only a few things in the house and ran out of bread. But on the bright side, I did make something that I think I would actually go out and buy the ingredients for to make again. Made for an excellent pre-lunch snack (read: second breakfast) and is technically Paleo. What? Paleo and tastes good? Yup, no bread in this BLT.

Sweet Potato BLT

Gather:
1/2 Pound of bacon
Lettuce
1 Medium sized tomato, diced
1 Sweet potato, peeled and diced
Salt and pepper, to taste

In a medium-sized skillet, cook bacon until crispy. Remove cooked pieces from pan and let cool on a paper towel (which will also soak up some excess bacon fat).

Remove most of the bacon fat and place skillet back on the stove. Add sweet potato and cook on medium heat until crispy. This can take 10-15 minutes. Stir occasionally.

Chop bacon and add to a bowl. Add sweet potato, diced tomato, and roughly chopped iceberg lettuce. Add salt and pepper. Toss and enjoy.

Paleo Breaded Chicken Wings

IMG_1655.JPGTwo of our friends are taking the Paleo/Whole 30 plunge. I’m proud of them. Like Andy and I, they, too, enjoy a cold beer, Chinese food, and well… anything bad for you that tastes so so good. And when they heard about how Andy and I were actually pretty successful at making meals feel like you weren’t suffering, they agreed to come over our house for the football game – Paleo food only served.

Which is exactly how I came up with these Paleo breaded chicken wings. Now stop right there. They are approved. My secret? Almond flour. All the crispy crunch of a breaded wing, without the bad stuff. Continue Reading

Paleo Swedish Meatballs

So I certainly could have taken a better picture of this, but I did my best. Really, I did. I’ll have to make these again during the daytime when the lighting is better. I was craving something different and stumbled upon some pins on Pinterest saying that Paleo Swedish Meatballs was a thing. Skeptical as I was, I did some digging, went through our cabinets, made a quick trip to the grocery store, and voila! I created Paleo Swedish Meatballs. Continue Reading
